Recipes: Chinese Curry

 

Here’s a recipe for Chinese curry that serves four people:

Ingredients:
– 2 tablespoons vegetable oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 tablespoon fresh ginger, grated
– 1 red pepper, chopped
– 1 green pepper, chopped
– 2 tablespoons Chinese curry powder
– 1 tablespoon soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon tomato paste
– 400ml coconut milk
– 500g chicken breast, diced
– Salt and pepper, to taste

Instructions:

1. Heat the vegetable oil in a large wok or frying pan over medium-high heat.
2. Add the onion and cook for 2-3 minutes until softened.
3. Add the garlic and ginger and cook for another minute.
4. Add the red and green peppers and cook for 2-3 minutes until they start to soften.
5. Stir in the Chinese curry powder and cook for 1-2 minutes until fragrant.
6. Add the soy sauce, oyster sauce, tomato paste, and coconut milk. Stir until well combined.
7. Add the diced chicken breast and season with salt and pepper.
8. Bring the curry to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
9. Serve the curry hot with rice or noodles.
