Recipe: Chicken Fajitas

Here is a recipe for Chicken Fajitas:

Ingredients:
– 4 chicken breasts, sliced into thin strips
– 2 bell peppers (red and green), sliced
– 1 large onion, sliced
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper (optional)
– Salt and freshly ground black pepper, to taste
– Juice of 1 lime
– 8-10 flour tortillas
– Optional toppings: shredded cheese, diced tomatoes, sour cream, guacamole, chopped cilantro

Instructions:

1. In a large bowl, combine the chicken strips, sliced bell peppers, sliced onion, minced garlic, olive oil, cumin, chili powder, smoked paprika, cayenne pepper (if using), and salt and black pepper to taste. Toss to coat the chicken and vegetables with the spices.

2. Heat a large skillet or griddle over high heat. Add the chicken and vegetable mixture and cook, stirring occasionally, for about 10-12 minutes until the chicken is cooked through and the vegetables are tender and slightly charred.

3. Squeeze the juice of 1 lime over the chicken and vegetables and toss to combine.

4. Heat the flour tortillas in the microwave or on a griddle until warmed through.

5. To serve, spoon the chicken and vegetable mixture onto the warm tortillas and add any desired toppings, such as shredded cheese, diced tomatoes, sour cream, guacamole, or chopped cilantro.

6. Fold the tortillas in half and enjoy your delicious chicken fajitas!
