Here’s a recipe for Chilli con carne:
Ingredients:
– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 red chilli, diced
– 500g beef mince
– 2 teaspoons ground cumin
– 2 teaspoons smoked paprika
– 1 teaspoon dried oregano
– 1/2 teaspoon ground cinnamon
– 1 can (400g) chopped tomatoes
– 1 can (400g) kidney beans, drained and rinsed
– Salt and freshly ground black pepper, to taste
– Chopped fresh coriander, for garnish
– Cooked rice or tortilla chips, for serving
Instructions:
1. Heat the olive oil in a large pot over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened.
2. Add the minced garlic and diced chilli to the pot and cook for 1-2 minutes until fragrant.
3. Add the beef mince to the pot and cook for 5-6 minutes, stirring occasionally, until browned.
4. Stir in the ground cumin, smoked paprika, dried oregano, and ground cinnamon. Cook for 1-2 minutes until fragrant.
5. Pour in the can of chopped tomatoes and stir to combine. Add the drained and rinsed kidney beans and stir to combine.
6. Season the chilli with salt and black pepper, to taste. Bring the mixture to a simmer and let it cook for 20-25 minutes until the sauce has thickened and the flavours have melded together.
7. Garnish the chilli with chopped fresh coriander and serve with cooked rice or tortilla chips.
