Recipe: Cauliflower Soup

Here’s a recipe for Cauliflower Soup:

Ingredients:
– 1 large cauliflower, chopped into florets
– 1 onion, diced
– 2 cloves garlic, minced
– 1 litre vegetable or chicken stock
– 250ml milk
– 50g butter
– 50g plain flour
– Salt and freshly ground black pepper, to taste
– Chopped fresh parsley, for garnish

Instructions:

1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and sauté for 2-3 minutes until the onion is translucent.

2. Add the chopped cauliflower to the pot and stir to combine with the onion and garlic.

3. Pour in the vegetable or chicken stock and bring to a boil. Reduce the heat and let the soup simmer for 15-20 minutes until the cauliflower is tender.

4. In a separate small pot, melt the remaining butter over medium heat. Add the plain flour and whisk to combine. Cook for 1-2 minutes until the mixture becomes smooth and bubbly.

5. Gradually add the milk to the flour mixture, whisking constantly to prevent lumps from forming. Cook for an additional 2-3 minutes until the mixture thickens.

6. Add the milk and flour mixture to the pot of cauliflower soup and stir to combine. Use an immersion blender or transfer the soup to a blender and blend until smooth.

7. Season the soup with salt and black pepper, to taste.

8. Ladle the soup into bowls and garnish with chopped fresh parsley.
