Ingredients:
– 300g spaghetti
– 1 onion, thinly sliced
– 3 cloves garlic, minced
– 1 red chilli, thinly sliced
– 250g cherry tomatoes, halved
– 500ml vegetable or chicken stock
– 50g grated parmesan cheese
– Salt and freshly ground black pepper, to taste
– Chopped fresh parsley, for garnish
Instructions:
1. In a large pan or skillet, combine the spaghetti, sliced onion, minced garlic, sliced chilli, and halved cherry tomatoes.
2. Pour in the vegetable or chicken stock and season with salt and black pepper, to taste.
3. Bring the mixture to a boil over high heat. Reduce the heat to medium-low and let the pasta simmer for 10-12 minutes, stirring occasionally, until the liquid has been absorbed and the pasta is al dente.
4. Add the grated parmesan cheese to the pan and stir to combine.
