Ingredients:
– 500g beef stewing meat, cubed
– 2 tbsp vegetable oil
– 1 large onion, chopped
– 2 garlic cloves, minced
– 2 carrots, chopped
– 2 celery stalks, chopped
– 2 tbsp tomato paste
– 400g tin of chopped tomatoes
– 500ml beef stock
– 1 bay leaf
– 1 tsp dried thyme
– 2 tbsp cornflour
– 2 tbsp cold water
– Salt and pepper, to taste
– 500g potatoes, peeled and sliced
– 100g cheddar cheese, grated
Instructions:
1. Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4.
2. Heat the oil in a large, oven-safe casserole dish over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes.
3. Remove the beef from the pan and set aside. In the same pan, add the onion, garlic, carrots, and celery, and cook for 5 minutes until softened.
4. Stir in the tomato paste, chopped tomatoes, beef stock, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
5. In a small bowl, mix the cornflour with the cold water until smooth. Add this to the casserole dish and stir well to thicken the sauce.
6. Add the beef back to the casserole dish and stir to combine with the sauce. Arrange the sliced potatoes on top of the beef and sauce, overlapping them slightly.
7. Cover the casserole dish with a lid or foil and bake for 1 hour.
8. After 1 hour, remove the lid or foil and sprinkle the grated cheese on top of the potatoes. Return the dish to the oven and bake for a further 15-20 minutes until the cheese is melted and bubbly, and the potatoes are tender.
